Miso Lemon Salmon

Get your fill of anti-inflammatory and health supportive fats in this mouth-watering salmon dish.  For a unique and gourmet flavor, you’ll love how simple this one is to prepare.  It’s great for wow-ing dinner guests!  And quick enough for a weeknight meal. 

1 lb wild salmon filets

3 Tbsp white miso

1 lemon, zested and juiced

1 Tbsp ginger juice (grate the ginger and then squeeze pulp to create juice)

2 Tbsp soy sauce (gluten-free)

1/4 cup warm water to dilute miso paste

2 scallions, sliced thinly

1. Mix miso, warm water, lemon zest, lemon juice, ginger juice and soy sauce together to create marinade.

2.  Place the salmon filets in a baking pan and cover with the marinade.  Cover pan, and leave in the refrigerator for at least 15 minutes to marinade.

3. Preheat oven to 400 degrees.

4.  Roast salmon for 10 minutes per inch of thickness of the filets (at the thickest part)

5.  Once roasted, garnish with the green onions and serve immediately.
