Raw Cauliflower Cous Cous

While I love the flavor of cous cous, I’m not a huge fan of the processed pasta that’s used to create it (yep, cous cous is a pasta made of refined wheat, not a whole grain).  This is a super delicious makeover of this Middle Eastern favorite using raw cauliflower as the base.  I have even had a few cauliflower-haters tell me how much they LOVE this dish.  This is perfect for summer picnics, a healthy side dish, or a yummy snack.  And leftovers are incredible, as the flavors really POP.

INGREDIENTS:

1 head cauliflower

1/2 bunch flat leaf parsley, chopped

1/2 cup of fresh mint leaves, chopped

1 tomato, diced

1/2 red onion, diced

1/2 cup extra virgin olive oil

1/4 cup lemon juice

1 tsp sea salt

1/2 tsp turmeric

1/4 tsp black pepper

 

DIRECTIONS:

1. Cut the cauliflower down the center, remove the stalk from both halves, then chop into florettes.

2.  Combine the cauliflower, parsley, and mint in a food processor.  Pulse until the cauliflower pieces are the size of pieces of rise.  Then, scoop this mixture out into a mixing bowl.

3. Add all of the remaining ingredients and toss well.  Place in the refrigerator to chill slightly before serving.

6 servings
Stores well in the refrigerator as leftovers.
