Mint Chip Energizing Smoothie

This chilling and refreshing concoction will take you back to days of ordering Mint Chip ice cream at Baskin Robbins … minus the sugar hangover!  I can’t get enough of this creamy creation compliments of my dear friend and fellow holistic health guru, Melissa Eliyahoo of Sprout Your Awareness.  I think I’ve made it three times this week since she introduced it to me.  Give it a try … I’d love to hear how you like it!

INGREDIENTS:

2 cups water

1 serving vegan protein powder (rice + pea blend works great, either chocolate or vanilla)

1 scoop greens powder (like Amazing Greens, Nanogreens, PaleoGreens, etc)

1 tsp – 1 Tbsp wheatgrass powder

1 Tbsp liquid chlorophyll

1/2 avocado

6 drops liquid stevia (more or less to taste)

1/4 tsp organic peppermint extract

1-2 Tbsp raw cocao nibs

A few ice cubes

DIRECTIONS:

1.  Add all ingredients (except the cocao nibs) to a blender and blend until creamy.

2.  Add cocao nibs and blend for another 10 seconds to break up the pieces into little chunks.

3.  Pour into a glass and enjoy!
