Hearty Kale and Raisin Salad

This is one of my favorite staple raw kale salads – it’s easy to make, and the flavor actually tastes even better after the salad marinates, so leftovers are great!

INGREDIENTS:

1 large bunch kale (I like the curly kind for this, but any will do)

1/4 cup raisins (cranberries or chopped apple is great too)

1/4 cup chopped raw walnuts (or try another nut like toasted pine nuts)

3 Tbsp extra virgin olive oil

1 lemon, juiced

Salt and pepper to taste

DIRECTIONS:

1. Wash the kale leaves thoroughly by soaking them in water, then drying with a salad spinner or paper towels.

2. Remove the stems from the kale leaves by either cutting or pulling them out (you can save them to add to soups or cook separately). Stack a few kale leaves together and chop into very thin strips. Place the kale strips into a large bowl.

3. In a separate bowl, whisk together the olive oil and lemon juice. Taste the dressing – you may want to add a dash of salt, pepper, or maple syrup to adjust the flavor.

4. Dress the kale with the dressing, a little at a time, until the leaves are covered. TIP: Use your hands to massage the dressing into the kale leaves for a great flavor.

5. Add the fruit and nuts and toss well to combine.
